Caciocavallo is the best cheese in all Sila’s products, well-known for its semi-hard texture and because it’s full of taste. Made only with cow’s milk, it has, normally, an oval or cone-trunk shape, with a thin envelope around it, straw yellow colored and a solid and thick inner dough.
