Gulia’s capocollo, a tasteful product, is made only with meat originating from animals grown and fed in Calabria. The meat between animals’ head and loin is processed, flavored and cared with spices, salt and pepper, and, then, enveloped with pig’s natural gut, tied with a string, in order to obtain its well-known cylindrical shape. Its substance is solid and firm, but, at the same time, this product is soft and tasty thanks to its meat and fat.
Gulia’s capocollo has a delicate and intense taste. It’s perfect if eaten pure, or with bread crumbs and semi-seasoned cheeses, undoubtedly excellent if you want to make a tasteful and fast appetizer, because it is as good and simple as where it comes from.
