Spontaneous or “wild” chicory, whose official name is Cichorium intybus, has a typical bitter taste, due to the presence of chic acid, which has several good properties anyway. Chicory is a source of vitamins C,B,P, and K; like the other bitter herbs, it has purifying functions. Furthermore, it has diuretic effects and balances sugars into our blood.
