Spontaneous or “wild” chicory, whose official name is Cichorium intybus, has a typical bitter taste, due to the presence of chic acid, which has several good properties anyway. Chicory is a source of vitamins C,B,P, and K; like the other bitter herbs, it has purifying functions. Furthermore, it has diuretic effects and balances sugars into our blood.
Chicory in oil is one of the best Calabrian agricultural products, and it’s very appreciated in the rest of Italy. This tasteful production can be eaten in different ways: it’s delicious if you add it to your appetizer, with cold cuts, cheeses, or as side with meat and fish dishes.
