Yellow, green, red… their lively colors mean: summer, sun, warm weather. Peppers are largely cultivated and diffused all around the world, but they’re vey often used in the Mediterranean cookery.
Rich in vitamin C, they have lots of antioxidants too, an average percentage of minerals, especially potassium, but also iron, magnesium and calcium.
Extremely versatile, they can be eaten either cooked or uncooked, filleted in vinegar, or in a salad with oil, black pepper and salt. Filleted peppers are excellent with bread crumbles or with bread baked in a wood oven. Thanks to their colors they “ decorate” many meat dishes, exalting their taste with their slightly hot and spicy flavour.
