Giuncata silana caprina bio can be considered a very special cheese in this production: it’s made only with cow’s, goat’s or both mixed milks, it’s salt free and rich of all important milk proteins. Its name derives from the traditional basket made with twigs interweaved together, in which the curd lies and then, turns into cheese.
Gulia’s giuncata silana caprina bio has a soft dough because its curd is not pressed. This cheese, thus, tastes of ricotta too. Perfect if eaten pure, or with Gulia’s hot pepper jam , Elder jam, Goji’s and Apricot’s ones.
