Rolled bacon is a cold cut which, although its high fatty percentage , it’s delicious anyway. Its taste is extremely delicate, and it’s very versatile in cookery. It’s made with pig’s girt, processed, in its turn, by using hot peppers and spices which are rolled into meat. Its external side is the fatty part, and, then, the bacon is tied with string and put into pig’s gut. A careful seasoning follows, in order to obtain a soft product.
